Sublime Creations - Cumin Roasted Carrots with Chickpeas and Feta


Ingredients:

  • 1 pound carrots, sliced into thin rounds

  • 1 cup cooked chickpeas

  • 1 teaspoon cumin

  • 1/2 teaspoon paprika

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1/4 cup olive oil

  • 1/4 cup feta cheese, crumbled

  • Fresh parsley for garnish (optional)

Instructions:

  • Preheat your oven to 400°F.

  • In a small bowl, mix together the cumin, paprika, garlic powder, and salt.

  • In a large bowl, toss the carrots and chickpeas with the olive oil and the spice mixture until they are well coated.

  • Transfer the carrot and chickpea mixture to a baking sheet and spread it out in a single layer.

  • Roast the carrots and chickpeas in the preheated oven for 15-20 minutes, or until they are tender and slightly caramelized.

  • Remove the baking sheet from the oven and sprinkle the crumbled feta cheese over the top of the carrots and chickpeas.

  • Return the baking sheet to the oven and roast for an additional 5-10 minutes, or until the feta cheese is melted and bubbly.

  • Garnish with fresh parsley if desired, and serve hot. Enjoy!
