Sublime Creations - Cumin Roasted Carrots with Chickpeas and Feta
1 pound carrots, sliced into thin rounds
1 cup cooked chickpeas
1 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 cup olive oil
1/4 cup feta cheese, crumbled
Fresh parsley for garnish (optional)
Preheat your oven to 400°F.
In a small bowl, mix together the cumin, paprika, garlic powder, and salt.
In a large bowl, toss the carrots and chickpeas with the olive oil and the spice mixture until they are well coated.
Transfer the carrot and chickpea mixture to a baking sheet and spread it out in a single layer.
Roast the carrots and chickpeas in the preheated oven for 15-20 minutes, or until they are tender and slightly caramelized.
Remove the baking sheet from the oven and sprinkle the crumbled feta cheese over the top of the carrots and chickpeas.
Return the baking sheet to the oven and roast for an additional 5-10 minutes, or until the feta cheese is melted and bubbly.
Garnish with fresh parsley if desired, and serve hot. Enjoy!
