Mexican Baked Salsa Chicken
Marinated in Mexican spices, these chicken breasts are oven baked in a homemade salsa and then topped with shredded cheddar cheese. The dish goes back in the oven where the cheese begins to melt holding the salsa and chicken together. The dish is then completed with a side of a Mexican spiced roasted potato & vegetable stew.
